Different countries use different temperature scales in their recipes. American recipes typically use Fahrenheit, European recipes use Celsius, and older British recipes may reference Gas Marks. Getting the temperature right is critical in baking, where even a 25-degree difference can affect whether your bread rises properly or your cookies come out crispy versus chewy.
350°F equals approximately 177°C (Gas Mark 4). This is the most common baking temperature used in American recipes for cakes, cookies, and casseroles.
Gas Marks are a temperature scale used primarily in British and Australian recipes. They range from ¼ (very cool, 225°F/107°C) to 10 (very hot, 500°F/260°C). Gas Mark 4 (350°F) is the most common setting for everyday baking.
For fan or convection ovens, reduce the temperature by about 25°F (15°C) compared to a conventional oven setting. For example, if a recipe calls for 350°F in a conventional oven, set your convection oven to 325°F. Cooking time may also be slightly shorter.
